• 1 pound mild Italian sausage

    • 1 large onion, diced

    • 1 cup carrots, diced

    • 1 bell pepper, diced

    • 2 cups frozen mixed vegetables

    • 2 cups sweet potatoes, diced

    • 1 stalk celery, diced

    • 1 cup brown lentils, rinsed

    • 1 teaspoon dried basil

    • 4 cups beef broth

    • 1 cup water

    • ¼ cup fresh cilantro leaves

    • Sour cream for serving

1. Remove sausage skin. In a large skillet, brown sausage over high heat.
2. Use your spatula to break the meat in small pieces. Cook until no longer pink.
3. In the Fusion Cooker's waterless pot, add onion, carrots, bell pepper, frozen vegetables, sweet potatoes, celery and lentils; top with cooked sausage; sprinkle with dried basil; pour beef broth over, followed by water.
4. Cover with the mental lid. Select “Soup” mode and let it cook. There’s no need to set the timer. The cooker will remind you 10 minutes before the soup is done when the Fusion Cooker makes a beeping sound. It will cook for about an hour.
5. Once the soup is done, turn off the cooker. Dish, garnish with cilantro leaves and serve with sour cream.
